High-Volume Mixing with Controlled Temperature Management

Designed for commercial bakeries and high-volume yeast dough production, the Lian Huat Horizontal Mixer provides a robust solution for large-batch mixing where consistent production conditions and controlled dough temperature are important.

A double-jacketed mixing chamber allows chilled water from an external chiller to circulate around the mixing area, supporting temperature management throughout the mixing process. This makes the Horizontal Mixer particularly suitable for production methods such as the sponge-and-dough method, where maintaining a stable mixing environment is an important part of the process.

The Horizontal Mixer can also support external systems such as water dispensing and flour silo feeding, providing greater flexibility for bakeries developing a higher-volume production setup.

Double-Jacketed Mixing System

The HOM features a double-jacketed mixing chamber designed for chilled-water circulation during mixing. By connecting the jacket to an external chiller, the mixing environment can be managed according to the temperature requirements of the production process.

Customers may select either a glycol chiller or water chiller according to their production requirements. This configuration is particularly suitable for sponge-and-dough production, where maintaining a stable mixing environment can contribute to consistent dough development and quality.

Designed for Yeast Dough Production

The Horizontal Mixer is designed for yeast dough applications and is particularly suited to production processes using the sponge-and-dough method.

Its horizontal mixing configuration, high batch capacity, two-speed operation, and temperature-management capability provide a practical solution for bakeries requiring consistent processing conditions across larger production batches.

Two-Speed Mixing

The HOM operates at two defined mixing speeds — 40 RPM and 80 RPM.

The two-speed system allows operators to adjust the mixing process according to different stages of dough preparation, supporting controlled ingredient incorporation and dough development.

Component Selection for Serviceability

The HOM uses carefully selected electrical and mechanical components to support reliable operation, maintainability, and long-term serviceability.

Where required, selected components can be specified according to availability and sourcing requirements, helping customers maintain easier access to replacement parts throughout the equipment's service life.

External Water Dispensing

The HOM can be connected to an external water dispenser to provide the required water input for dough mixing.

The relationship can be compared to a water tank and tap: the HOM provides the mixing vessel, while the water dispenser provides the water input. The functionality and specification of the water dispenser can vary according to the customer's production requirements and applicable standards.

Silo System Integration

The HOM supports integration with a flour silo system for higher-volume production.

Connecting the mixer with an upstream silo and flour feeding system can reduce manual flour handling and provide a more streamlined method of transferring bulk flour into the mixing process.

This makes the HOM suitable for bakery operations where bulk ingredient handling is an important part of the production process.
